CapriLac Goat Milk Products

Our Process

Our processing facilities are situated in Keysborough Melbourne. At our factory we make our range of fresh milks, yoghurts and powders for distribution throughout Australia and to our international customers.

The factory was fully rebuilt in 2000 and upgraded again in 2005 and 2009 to ensure we stay at the highest level of hygiene standards and efficiency.
When the fresh milk off the farms arrives at the factory it is immediately transferred into large chilled silos, by keeping it at less than 4C we can ensure the quality and freshness is maintained. The fresh milk is pasteurised that same day and is normally processed into a variety of products that same day as well.

Fresh Milk

Once the milk arrives from the farm it is pasteurized and homogenised as soon as possible and bottled into our 1 litre plastic bottles. We use the 1 litre plastic botlle because of its convenience, you as the customer can see what you are buying. Once the milk has been bottled it is tested for quality and sent out to our customers the next day. Often the milk is on the shelf the next day.

Yoghurt

CapriLac yoghurt is made from full cream whole milk. The milk is evaporated to bring the solids to 20% and then cultured overnight to deliver a delicious firm set. Evaporating the milk only removes water without reducing the goodness of the goat milk or changing the flavour. The yoghurt is then packed into plastic pots with a resealable lid for your convenience. The yoghurt is checked for quality and sent out the next day.

Milk Powder

Our tall form spray drier makes an easily dissolved high quality powder. For those who don’t know how milk powder is made, this is the process. First the milk is tested then pasteurised and homogenised to ensure the microbial status of the raw milk. From there the milk is evaporated through our falling film evaporator, this removes only the water and concentrates the milk by a factor of 4 times. After evaporating the milk is put through a high pressure pump at 200 Bar and dried in the spray drier to give a free flowing powder.
